Thanksgiving is right around the corner, and what better way is there to prepare for this hardy holiday than with the perfect dessert? Everyone loves indulging in Thanksgiving feasts but often times they forget to save room for dessert. Save a little space and try this delicious homemade mini apple pie recipe! Mini Apple Pie Filling
- 2-3 large apples
- ¾ cup white or brown sugar
- 1 teaspoon cinnamon
- 2 ½ tablespoons flour
- ½ cup apple juice
Mini Apple Pie Crust
- Medium sized muffin baking liners
- 1 can refrigerated biscuit dough
- 3 tablespoons sugar
- 1 tablespoon cinnamon
Start by peeling, coring and slicing or dicing the apples. Heat a saucepan over medium heat, and add the sugar and cinnamon to the pan. Once your mixture begins to boil, add the apples, flour and apple juice to the pan, stirring until there are no lumps. Cover the pan and reduce the heat, letting the apples simmer for 20 minutes. Once the apples have cooked, remove the pan from the stove and let them cool for 20 minutes.
Next, place the muffin liners inside the muffin pan. For each liner, use half of a biscuit to form the shape of a cup. In a bowl, mix the sugar and cinnamon together and sprinkle over the pressed dough. Scoop one tablespoon of apple filling into each liner. Sprinkle the top of each pie with the sugar-cinnamon mix again. Bake the pies in the oven at 350 degrees for about 15 minutes, or until the biscuits are golden brown.
