Low-Fat Mac and Cheese

Love comfort food but hate the calories? Here is an interesting low-fat recipe for macaroni and cheese that includes fat-free cottage cheese. Try it the next time you get the craving for something cheesy.

What you will need:

  • 1 cup fat-free milk
  • 1 1/4 cups shredded reduced-fat Cheddar cheese
  • 2/3 cup fat-free cottage cheese
  • pepper to taste
  • 2 1/2 cups cooked elbow macaroni
  • 1 tablespoon grated onion

Instructions:

In a blender or food processor, combine the milk, cheeses and pepper. Cover and process until creamy. Pour into a bowl; stir in macaroni and onion. Transfer to a 1-1/2 qt. baking dish coated with nonstick cooking spray. Bake  uncovered at 350 degrees for 1 hour or until heated through.

This new take on mac and cheese will have your family and friends wanting more. It is a low-fat recipe, which will be easy on your waistline while you still enjoy the rich cheesy taste of macaroni and cheese.
