Happy Valentine’s Day! For this Valentine’s Day, skip going to the bakery and make your own delicious dessert. Red velvet has always been a favorite of mine, and now it may become a favorite of yours. The cupcakes are red, like the flavor implies, and have a rich, almost chocolate flavor that goes great with cream cheese frosting. Try these cupcakes out for your friends and loved ones for Valentine’s day, and you’ll surely have a new favorite recipe for holidays to come.

This recipe will make 24 cupcakes and takes approximately a total of 40 minutes.


You will need:


For the cupcakes:


  • 2 ½ cups all purpose flour


  • 1 ½ cups sugar


  • 1 teaspoon baking soda


  • 1 teaspoon salt


  • 1 teaspoon cocoa powder


  • 1 ½ cups vegetable oil


  • 1 cup buttermilk, room temperature


  • 2 large eggs, room temperature


  • 2 tablespoons red food coloring


  • 1 teaspoon white distilled vinegar


  • 1 teaspoon vanilla extract


For the cream cheese frosting:


  • 1 pound cream cheese, softened


  • 2 sticks unsalted butter, softened


  • 1 teaspoon vanilla extract


  • 4 cups sifted confectioners’ sugar


  • Sprinkles, strawberries (optional)


Note: It is important to have the eggs, buttermilk, cream cheese and butter at room temperature. This will make the ingredients easier to mix, and will constitute a creamier batter for baking.




For the cupcakes:


  • Preheat the oven to 350 degrees. Line 2 muffin pans with cupcake papers.


  • In a medium mixing bowl, mix together the flour, sugar, baking soda, salt and cocoa powder. In a large bowl, gently beat together the oil, buttermilk, eggs, food coloring, vinegar and vanilla with a handheld electric mixer. Add the mixed dry ingredients to the wet ingredients, and mix until a batter consistency remains, and there is no lumps of flour or sugar.


  • Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for 20 to 22 minutes. The cupcakes are done when a toothpick inserted in the middle comes out clean. Remove from the oven and cool completely before frosting.


For the Cream Cheese Frosting:


  • In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

This recipe is not only good for Valentine’s, but the red cupcakes will also suit holidays like Christmas. Try adding strawberries and sprinkles on top of the cupcakes for an added touch, or decorate the top of the cupcakes with X’s and O’s as seen in the picture above.
