I have been so excited to try this idea for watermelon “pizza”! I noticed that slices of watermelon reminded me an awful lot of pizza slices. Thus, the watermelon pizza idea was born. When hostessing, I always like to be sure that my recipe ideas are easy. You won’t have time for being locked up in the kitchen while greeting guests and mingling. So be sure to keep a few “go-to” recipes on hand for entertaining in your apartment. This one doesn’t involve hot ovens, and it’s ready in seconds!

This watermelon pizza comes together super-fast, with ingredients easily accessible at the store and is fabulous for a crowd – in addition to being delicious! You can absolutely customize your “pizza” to your liking by swapping in and out your favorite ingredients. Below are my favorites for this watermelon pizza.

Ingredients
  • 1 round slice watermelon
  • 3 tablespoons balsamic vinegar (or balsamic glaze)
  • 1/4 cup toasted almonds (sliced or slivered)
  • 1 bunch basil leaves diced finely
  • 1/4 cup blue cheese crumbles (feta would also be an excellent choice)

Instructions
  1. Assemble the toppings over the round watermelon slice. Drizzle with the balsamic vinegar and slice into “pizza slices”! Enjoy!

I love how the blue cheese and almonds pair with the watermelon’s sweetness. The balsamic drizzle adds an extra layer of flavor that is just delicious. The basil is very refreshing as a garnish. Mint would also be a tasty choice.
